Christmas Mincemeat
Serves 8
- 1lb raisins
- 1lb sultanas
- 12oz grated apple
- 6oz brown sugar
- ¼ pint brandy
- ¼ pint whiskey
- 3oz butter
- Juice and rind of one lemon
- Pinch of nutmeg and cinnamon
- 2oz almonds
- 2oz walnuts
- 4oz mixed peel
- 2 tablespoons of marmalade
- Mix all ingredients together in a large saucepan.
- Slowly bring to the boil and simmer for 30 minutes.
