Rillettes Of Salmon With Crème Fraiche, Horseradish And Herbs
This is a fab starter, Can be prepared hours in advance, as can the cucumber pickle - you can't go wrong. I serve in ramekins.
- 225g / 8oz poached salmon flaked
- 175g / 6oz smoked salmon (cut into ½ cm dice)
- 3 tbs crème fraiche
- 1 tbs creamed horseradish
- 1 tbs chopped dill
- 1 tbs chopped chives
- salt and pepper
- 1 pinch cayenne pepper
- 1 squeeze lemon juice
Mix all the ingredients together. Serve lightly chilled.
