Lemon Drizzle Cake
175oC/160oC Fan Oven 40/50 minutes
Ingredients
4 oz Soft Margerine
6 oz Self Raising Flour
1 level teasp Baking Powder
6oz Castor Sugar
2 large eggs
Grated rind of one lemon
4 Tablespoons of milk
Topping
Juice of one lemon
4 oz sugar
Method
Beat all ingredients together until smooth. Pour mixture into a lined 2lb loaf tin. Bake in oven for 40 to 50 minutes. When cooked leave to cool in loaf tin and pour lemon topping over cake.
