Lemon Rosemary Chicken Breasts
Ingredients
2 lemons
1 tablespoon fresh rosemary chopped
1 garlic clove
2 teasp olive oil
½ teasp. Salt
¼ teasp coarsely ground black pepper
4 chicken breasts
Method
1. From one lemon, grate 2 teasp peel. From ½ lemon , cut thin slices, reserve for garnish. Squeeze juice from remaining 3 lemon halves into a medium bowl. Stir in lemon peel, rosemary, garlic oil, salt and pepper.
2. Add chicken breasts to lemon juice mixture.
3. Arrange chicken under a medium heat and grill brushing with remaining lemon juice mixture, 5 minutes each side until chicken looses its pink colour throughout. Garnish with lemon slices.
